Mail Time!

Hey y'all, sorry it's been a few days since my last post (working 12 hours shifts really doesn't leave much time in the day to blog!) but no worries, because I'm back :)!

So my post today is about the best package I received from a lovely and very talented friend, Rachael, creator of the Letters from a Mermaid blog (ps: you can visit her blog here- http://lettersfromamermaid.blogspot.com/)! She is a doll and I'm so glad we've been able to become friends! So a couple months ago, she began to create custom stationary and I ordered some. They came in yesterday and I LOVE THEM! I knew I would anyways, but they are gorg!!! She can make a multitude of different cards, she has samples on her blog if you're interested!

If there's one thing you need to know about me, it's that I love mermaids and monograms!

I mean seriously. this is talent at its best! I love the greens and blues...not to mention the anchor (fun fact: I love everything nautical!) 

I adore getting and sending mail, and these little babies will definitely be put to use very soon! I often feel like I was born in the wrong time, because I literally have 3 separate boxes of stationary and if sending mail was free, I'd send letters out every day!! Plus, these custom letters make for great Christmas gifts, in case you wanted to get a head start! 

Well lovelies, it's exactly 1 week until Thanksgiving and I can't believe that this year is almost up! I got started on my blog pretty late in the year, but I hope that you continue to read it into the new year! I have some pretty big expectations for this coming year and I hope that y'all do as well! It's always a good day when you think of ways to improve yourself and 2014 will be the best time to get started on your goals! I wish you good luck on every one! Have a good night, y'all! Kale..well actually food in general!

Hey y'all! So my post today is about food, freaking yum! So I'll start off with the fact that I just finished making my lunch for tomorrow. You're probably wondering why in the sam hill I'm making lunch for tomorrow, but I have several good reasons!  

  1.  I'm too lazy to wake-up early and make it (true story-I love sleep). 
  2. It's way cheaper to bring your lunch, instead of running down to the cafeteria for a greasy $3.00 cheeseburger, chips and a drink. 
  3. I work in healthcare and while we work some of the longest shifts...we get the shortest lunches (I only get 30 mins, I'm not even joking!). As much as I love spending half of my lunch waiting in line to get my food, I'd much rather go and sit on my butt and relax!
So I know you guys are dying to know I'm so excited for my lunch tomorrow! My lunch includes a PB and banana whole wheat sandwich, baby carrots, strawberries, celery and (the basis for today's post) KALE! 

Kale has been all over Pinterest lately, what with kale chips and all, but I'll be the first to admit...I'm a picky eater. I tried making kale chips and couldn't even stomach them let's just say that I was not a fan. But I've had kale before, it's actually the baking of the green. While I understand that cooking some veggies is actually better than eating them raw, I can only eat 2 cooked veggies (broccoli and carrots). So today I was catching up on some grocery shopping today and whilst carousing the produce section, I came upon baby kale and decided to give kale another shot. This time, I decided not the cook the kale, but just drizzle it in EVOO and garlic sea salt. It turned out AHHHHmazing! Here's the super simple recipe:
  • Rinse the kale, pat dry with a paper towel
  • Put the kale in a container with a lid so you can shake it up 
  • Drizzle kale with EVOO (I purchased Bertolli spray EVOO) and garlic sea salt (McCormick with the grinder)
  • Shake that kale, sista! 
  • Enjoy! 
See y'all, super simple! (I patted the kale dry because I wanted the salt and EVOO to stick to the kale)

Hey y'all! First blog post here. I've never blogged before, but I'm about to embark on a lengthy, difficult, but totally-worth-it journey and I figured now's a good a time as any to begin!

Little bit about me, I'm a 23 year old Kentucky gal (unfortunately not by birth) who recently re-located to the Triangle area of North Carolina. I'm currently a surgical tech in the OR, with a goal of becoming a PA. I have one dog, Presley, who is a Treeing Walker Coonhound/Black lab mix and she is my pride and joy. She's a huge brat but I still love her :) I have this crazy ambition to live by the sea and be Jimmy Buffett...if you don't know him, I'm sorry. The journey I'm about to begin not only includes my education and career goal, but my weight loss dreams. It will be tough, but I need to complete this journey for several reasons, but most importantly it's for myself! I'm not entirely sure what my blog will end up focusing on, but for now my dreams are good enough :)
